                                       How to make chicken essense by the machine of JUNZHUO MACHINERY?

The raw and auxiliary material of chicken essence is powder, the next step is mixing.

The purpose of mixing is to evenly distribute the raw materials in a variety of proportions, so that ensure the quality of each batch products remains consistent.

The mixing of chicken essence production technology can be divided into pre-granulation mixing (Mix the ingredients well to prepare for granulation) and final products mixing(Product particles in the mix attached to some flavor or grease).

Normally, there are two kinds of mixing ways. One is dry mixing, another is wet mixing.

Chicken essence is made by wet powder granulator, so it is suitable for wet mixing. The wet mixing equipment must be equipped with a forced stirring device so that the materials can be evenly mixed.

There are two kinds of machine can be used for wet mixing, twin screw cone mixer and CH series trough mixer. Twin screw cone mixer has strong stirring power, but there are many dead corners which are hard to clean, so it is not a good choice.

There are many advantages of CH series trough mixer, such as large opening, no dead corners, easy to clean and operate. These features make it become a necessary mixer in the production line equipment of chicken essence.

The trough mixer is named after the appearance of the manger. The working principle is put the materials to be mixed into the mixing chamber, usually the loading factor is 0.4, mix the dry powder few minutes. Then put into egg liquid, water, oily material and other raw materials. Mix the materials thoroughly by turning and stirring the blade.

The key of trough mixer quality is sealing of shaft and mixing chamber. If the sealing is not good, small particles will enter the gap and the bearing, the mixer will not work normally in two or three weeks. It is very important to clean it up per shift. 

Dry mixing is a method of mixing materials by gravity impact. Before wet mixing, it is better to do pre-mixing in a dry mixer. Raw materials with very different proportions can be mixed evenly to ensure the best quality. V type mixer, SBH series three dimensional motion mixer, high speed mixing granulator is available.

No matter choosing which kind of mixer, please take attention to these questions.

1. The construction material must be stainless steel, inside and outside of mixer should be polished.

2. There should be no dead corners in the equipment, and the welding part should be finely polished to prevent welding slag from entering the food.

 3. The mixer should be operated under loading, check the coaxiality of the equipment and the quality of the bearing. Add water to test its sealing.

  After mixing, the wet powder is going to make into granules. The production of chicken essence will enter the granulation process.

There are two kinds of granulation methods: dry granulation and wet granulation. Since dry granulation is made by compaction, the granules are not easy to dissolve, so it is not suitable. Wet granulation equipment includes: fluid bed granulator, oscillating granulator, rotary granulator and twin screw extruder. These four types of equipment have their own characteristics, please allow us to introduce them one by one.

The working principle of the fluid bed granulator is: put the dry powder directly into the equipment and fluidize it through the air inlet system. The binder is continuously sprayed in the process of powder fluidization, and the powder is agglomerated into particles with the binder, the continuous hot air makes the particles dry quickly. The equipment features are getting loose granules, fast dissolution, mixing and granulation in one step, and stable product quality. But this equipment is high in cost and low in output, so it is suitable to make top grade condiment.

Swing granulator is a very common granulating equipment, which can adapt to various formulas, including high sugar content, high salt content, high starch, and high moisture content materials. Getting different sizes of granules by changing screen sieves, the final particles dissolve quickly. This machine has advantages of small investment, easy maintenance and simple operation. Using nylon screens if possible, to avoid the danger of metal mixing with food due to broken wires of stainless steel screens.

The granules made by rotary granulator are cylindrical (φ1.2-1.8mm) with beautiful appearance. It has a strict requirement of the chicken essence formula. In general, formulas with high sugar content are not suitable for rotary granulator, because the sugar dissolves easily after a long time of friction, which will affect the continuity of granulation. Formulas with high starch and high maltodextrin are also not suitable, because the screen sieve is easy to damage. However, with the development of technology and process, these problems have been solved to varying degrees. The granules produced by the rotary granulator are tighter than made by oscillating granulator.

Twin screw extruder can make very small cylindrical particles (φ0.5-1mm), the particles are particularly beautiful and neat, but they are rarely used due to high compactness and poor solubility.

The selection of granulation equipment should be comprehensively considered and comprehensively selected according to many factors such as the shape, solubility, formulation and composition of the granules. Only in this way can we produce good appearance chicken essence with better quality.
